Introduction

Of all the cuisine in the world, how come one of the most comfortable restaurants is Chinese cuisine? How is it that there is not a single place in the world that does not have a Chinese restaurant? Therefore, this means that there should be at least one meal from the food that can be repeated or prepared by just anyone. There really is also a popular food item called – dumplings. However, no matter how easy it may be to be made by any chef and thus represent Chinese food culture around the world, it is important to remember that there is nothing like having dumplings in China itself.

What Are Dumplings?

  • The word “dumpling” was first used in an English text of the 1600s, where it was noted that the word may have originated in Germany.
  • In Chinese, dumplings are known as jiaozi.
  • It is known as gyoza in Japanese.
  • In Asian cuisines, dumplings are a soft, medium-sized filling of dough.

Dumpling - A Food History

  • Many scholars believe that the dumplings were invented by Zhang Zhongjing, a Chinese physician who lived in the Eastern Han Dynasty, the second dynasty of Chinese empires that lasted from 206 BC to 220 AD.
  • As the legend goes, winter was difficult and many suffered from severe colds.
  • To help keep warm, Zhongjing took lamb, herbs, and peppers and wrapped them in the dough, smoking them to cover everything and keep them warm.
  • These hot, pillow-like foods helped people cope with the cold weather, while Zhongjing herbal supplements worked to improve blood circulation and prevent frostbite.
  • Although the history of dumplings is often accepted as starting with Zhang Zhongjing, the general concept of dumplings as we know it today follows an interesting and varied approach.
  • Although Zhongjing may have created dumplings in the first place to help people survive the harsh winters, some cultures make dumplings for other reasons, such as to help prolong body health and use more grains

  • Many different cultures developed their own dummies, and many of those dumps look very different from what Zhongjing first created, such as gnocchi and matzo balls.
